Pizza for everyone

It was not too long ago that I was able to eat several pieces of an everything on it pizza and not even think twice about it. I recently had gastric bypass surgery and am still not able to eat "normal" food, but the food I can eat has to have flavor. I wouldn't have even thought about making a pizza at this point but I remembered the wonderful portabello mushrooms I had in my fridge. No need to even have the evil crust that would physically hurt me at this point. My goal is to eat healthy but also have flavor. This little 6 inch pizza turned out so delicious and it will be added into our regular menu's. I cant wait to try different variations. 👅
You can even have a pizza making party with your littles, teach them to eat healthy and have some fun bonding time. 

Here is how you make this incredibly easy, healthy chicken portabello pizza.
 -Preheat oven to 450
-Remove the stem from your portabello - I kept this, chopped it up and added it to my toppings.
-Drizzle inside of mushroom with olive oil, salt and pepper
-Cook 10 minutes. Use this time to get your other toppings ready.
-Remove mushrooms from oven, add pizza sauce, cheese, pre-cooked meat and/or veggies. Top with a little more cheese.
-Place back in oven for another 5-7 minutes.

** Variations: Instead of pizza sauce try a low fat alfredo or even spinach artichoke dip. I could only eat about half of one pizza so my next experience will be to see how well these reheat. However, if you have a normal size stomach, I am pretty sure leftovers will not be an issue.
